Confectionary — Gelatine is used as gel former, whipping agent, binding agent, protective colloid and emulsifier. It is commonly used in confectionary products because it foams, gels, and solidifies into a piece which melts in the mouth. Gelatine is used in the production of gummies, toffees, chewy candies and whipped confectionaries, such as marshmallows.

Desserts — Gelatine is used as stabilizer for cream fillings and frozen desserts, and helps to firm consistency in milk products and mousse desserts.
